Rezala – Lamb Rib Chop Curry with Rose Water and Saffron

Tomorrow I am heading off to Asia once again, returning to Hong Kong, but also managing to squeeze in a long overdue visit to Vietnam. I’m looking forward to visiting my favourite eating haunts that I discovered on my last visit to Hong Kong in December/January, as well as scoping out new restaurants that I never had time to visit. As for Vietnam, well I cannot wait to see what it has to offer on the food front. I am definitely going to be seeking out the ubiquitous Pho – the legendary Vietnamese soup and Banh Mi, which I fell in love with after eating my first here in London, it’s basically a Vietnamese version of a sandwich but is off-the-charts incredibly tasty. I am also looking forward to sampling a variety of Vietnamese spring rolls and hoping I can remember how to make them when I come back home so that I can share the recipes with you. Whilst I am not a coffee drinker I hear the coffee in Vietnam is out of this world and may even win over a non-coffee drinker….so let’s see.

In the meantime the dish I wanted to leave you with today, and one that I hope that you will try, is a Bengali dish known as ‘Rezala’, whose roots lie with the Muslim rulers of the Mogul era. It is both fragrant and sweet and yet there are some sharp notes from the lime that compliment the overall taste of the dish. Other flavours resonate from the dish as well including: cloves, cardamom, saffron, ginger, garlic, cumin and chilli powder. It is a dish that heightens the senses and beckons you to eat more….so you’ve been warned!

Rezala – Lamb Chop Curry with Rose Water and Saffron

Adapted from Mridula Baljekar’s recipe in ‘Curry Lovers Cookbook’

Serves 6-8 (or 4 with leftovers for another day!)

3 medium sized onions, chopped

splash of water

3 garlic cloves, crushed/chopped

3 tsp grated fresh ginger

6 cloves

18 peppercorns

8 green cardamom pods

4 small pieces of cinnamon bark

14 lamb rib chops

2 medium sized onions, very finely sliced

200ml natural plain yoghurt

75g butter

vegetable oil

1 tsp salt

1 tsp ground cumin

1 tsp chilli powder

1 tsp sugar

juice of half a lime

pinch of saffron – place into a small bowl with 1 tbsp of hot water for 10 minutes

1 tbsp rose water

1. Place the three chopped onions into a blender with a splash of cold water and blend until you have a smooth puree.

2. Place the puree into a large bowl along with the grated ginger, garlic, cloves, cardamom pods, peppercorns and cinnamon bark and stir together before adding the lamb rib chops. Use your hands to  coat the lamb fully. Cover with cling film and place in the fridge for a few hours – or overnight if you can. Remember you need to bring the meat back up to room temperature before cooking it!

3. Heat some oil in a large pan and gently fry the remaining 2 onions, which need to be finely sliced. Gently fry until the onions have browned, which will take around 6 minutes. Remove the onion from the oil and place on some kitchen paper so as to soak up the oil.

4. Using the same pan, fry the marinated lamb chops for 5 minutes before reducing the heat and simmering on a low heat covered for another 5-7 minutes.

5. In a separate pan mix the butter and yoghurt together, stirring constantly for around 5 minutes before stirring into the lamb chops, along with the salt, cumin and chilli powder. Cover and gently cook for 50 minutes.

6. Finally add the sugar and stir into the curry before adding the lime juice, saffron and rose water. Mix well and simmer for a few minutes.

Serve with the fried onions and a scattering of rose petals. The sweet smells coming from this dish are sublime. Eaten with rice or naan, this dish is very memorable. I hope you agree.

Curried Potatoes and an Award

There has been a whirlwind of activity in my household this week, getting ready for our departure to Hong Kong for the Christmas holidays. Big A and little Z breaking up from school and I have been doing last minute Christmas shopping – all done now, big sigh of relief – on top of that the ‘outlaws’ are spending this week with us, which means there is a lot of feasting and fragrant Indian cooking smells coming from the kitchen. A sprinkling of Christmas drinks with the traditional mulled wine (blog post for christmas 2013 I think) and carol concerts have added to the Christmas spirit and excitement.

Out of the blue this morning I received a ‘Blog of the Year Award’ from the lovely Charu who writes Soul of Spice, and whose blog I enjoy following immensely.

As part of the honour I must bestow the award on others that stand out for me. It’s a tough call as there are many strong contenders out there, but there are two obvious ones for me:

1) The Garum Factory. Written by husband and wife, Ken and Jody who are based on the east coast of the US.  Importantly the recipes are temptingly delicious and ones that I actually want to cook (mainly savouries, which suits my palette) The photographs always inspire me to try and improve mine ;o) and the narrative is always very amusing. I also mentioned The Garum Factory in a past post here

2) The other one I always enjoy reading and perusing over is The Hungry Australian written by Christina. She always seems to have a million things going on at once (running Eat Drink Blog conferences, the food blogger hop, writing articles for magazines, being a good mother, wife etc)  but is consistent at posting interesting blog posts with bright, impressive photos and interesting recipes, many with an Asian twist – which is  a winner in my book.

So I pass on the honour to both of you. Congratulations.

Yes – that’s right – there are stars to collect! Unlike other awards which you can only add to your blog once – this award is different! We all love potatoes right? So I thought that a new way to cook them might appeal to you all, hence the curried potatoes recipe below. I am sure I am not alone in saying that potatoes and rice are the two staples that you will always find in households, so if you want to cook an easy, cheap and quick supper making this dish, along side a dal for example, makes a really filling and tasty supper/lunch.

Curried Potatoes

Serves 4

2 tbsp mustard oil (or vegetable oil if you don’t have mustard oil)

500g small potatoes (I use Charlotte, but new would be good too)

1 tsp mustard seeds

1 onion, finely chopped

1 green chilli, chopped in half

4 inch piece cinnamon bark, broken into pieces

3 curry leaves

2 cloves

1 tsp turmeric

150 ml water

1 tbsp yoghurt

1/2 tsp sugar

1 tsp salt (to taste)

1. Boil the potatoes until they are softened – this will take around 10 minutes. Drain and place to one side.

2. In a pan gently heat up the mustard oil and when it is hot add the mustard seeds and stir for 10 seconds, then add the chilli, cloves, salt, sugar, cinnamon bark and curry leaves and stir once again.

3. Add the onion to the pan and stir into the spices. When they have softened and begin to bronze add the turmeric followed by the potatoes and stir in together so that they are properly coated in the spices.

4. Place the water and yoghurt in the pan and gently simmer  with the lid on until the water has almost completely been absorbed.

Serve immediately with some Indian bread, such as luchi or paratha. It would also go very well with a cinnamon and ginger dal


Mountain Air and Chinese Marbled Tea Eggs

Mr B and I have just returned from one of those magical long weekends when you literally have to pinch yourself that what you are experiencing and seeing is actually real. We were attending a friend’s wedding in South Tyrol in Northern Italy, but due to logistics we decided to fly into Munich, a city we hold dear and one that we visited last December. Driving through Germany, Austria and into northern Italy may sound like a bit of an epic journey but the truth of the matter is that it only takes 3.5 hours and we thought a scenic drive through the  Brenner pass would be rather pleasant.

Our destination was the stunning eco spa hotel, Vigilius mountain resort, which was lovingly designed by architect Matteo Thun. The hotel blends into the natural environment seemlessly due to the use of materials from renewable resources. All the water used in hotel – from the pool, shower, baths and drinking comes from the Vigiljoch spring water.  To reach the hotel you need to take a cable car for about 15 minutes and upon arrival you really do feel a world away from the stresses and interruptions of day to day living. There is no Wifi or TV in the hotel, which allows you to really switch off and enjoy the natural environment that you find yourself in.

The wedding itself allowed us to explore the mountain side, not least because we had to take a single chairlift a further 15 minutes higher up the mountain and then a 15 minute walk to the church. It was one of those experiences that we will remember and cherish forever, not least because of the surreal nature of taking a chairlift dressed in wedding attire.

The smell of the pine forests and the wood burning in the chimneys conjured up happy memories of times in the mountains when the snow was thick and heavy. It was refreshing though seeing the mountains covered with grass and wild flowers and the cows with bells around their necks.

During the church service itself, the cow bells could be heard just outside the church entrance, to the extent we would not have been surprised had they ambled in to take a look at what was going on.

On Sunday, after all the wedding festivities were drawing to a close, Mr B and I returned to the top of the mountain and had a good amble around the wooded paths that are carved into the mountain. We came across characterful chocolate box houses similar to the ones that we all draw as children. I loved the green shutters and the window boxes filled with bright red flowers matching perfectly with the red gingham curtains.

We returned, one last time, to the church where we had spent some precious moments the previous day.

It was hard to drag ourselves away from such a picturesque spot, with beautiful blue skies and wonderful green mountains.

Returning to London I was convinced that the good weather must surely have arrived to our shores – I was clearly delusional after all that mountain sun and fresh air – as the rain persists and people’s moods continue to fray.

As activities with Big A and Little Z are housebound with the continuous downfall, we decided to make some Chinese marbled tea eggs. In China, the eggs are a common snack that are adored by school children and adults alike. The marbled effect, that is created through gently cracking of the hard boiled eggs, is attractive and unique, in that no two eggs will look the same. The girls love to see the different effects that are created each time we finally break open the shells.

I have loved hard boiled eggs for as long as I can remember, to the extent that no picnic is complete without them. As well as being aesthetically pleasing, Chinese marbled tea eggs also taste really delicious with the subtle flavours of tea, soy and aniseed gently resonating from the egg. So why not try making these next time you plan on having a picnic when the sun shines or, for that matter, when it rains and you decide to have it inside instead.

Chinese Marbled Tea Eggs

Sourced from Balance and Harmony Asian Food by Neil Perry – p193

6 free range or organic eggs

3 tbs Jasmine tea leaves (or black tea leaves)

2 cinnamon bark sticks

3 star anise

half tsp sea salt

100 ml dark soy sauce

1. Place the eggs in a pan of cold water so that they are completely covered and gently bring the water to the boil. Simmer gently for 6 minutes.

2. Gently transfer the eggs to a bowl full of ice and then cover with cold water. Place the pan of boiled water to one side as you will use this later.

3. Once they are cooled tap the eggs gently so that the shell cracks but does not break off. You want to have the effect of lots of small cracks.

4. Place the eggs in the pan of boiled water and add the tea, cinnamon bark, star anise, salt and soy sauce.

5. Simmer for a further hour and then remove from the heat and leave to cool completely. The longer you leave them the more flavour is drawn into the eggs and the more marbled the eggs become. Those above were left in the fridge overnight.

6. To serve remove the eggs from the stock and carefully remove the shell to reveal the unique marbled effect.
