10 Minute Asian Squid With Noodles

I love all the traditional feasting around Christmas and the warm, inviting smells that come from the kitchen. Sometimes however, I think it is rather refreshing to have a completely different, spicy type of dish to feed the family over the Christmas week.

Squid is very economical, especially if you are feeding large numbers and takes minutes to cook. So I imagine you have been feasting royally over Christmas and Boxing Day and you crave something a little lighter and perhaps a chilli kick. You want minimum fuss to prepare a work of wonder. Step forward my ‘Asian Squid with Noodles’ to feed the family. It really is ridiculously easy and quick and you will be rewarded by many happy faces. By all means tone down the chilli if you are feeding to little ones (I tend to do a separate one for my youngest).

I find the best place to buy squid is fresh from the fishmonger or from the fresh fish counter at your local supermarket. The fishmonger can gut the squid for you so that all you need to do is to cut it into rings. Gutting the squid yourself though can be rather good fun, but perhaps not if you are squeamish. I will do a vimeo of me doing it next time I make this and will then paste it up here for you to see. Watch this space. It’s actually very easy and my daughters actually enjoy helping me with this part.

10 Minute Asian Squid With Noodles

serves 4

2 tbsp sesame oil

1/2 white onion, diced

4 garlic cloves, finely sliced

1 inch of ginger, finely grated

1 red pepper, chopped

2 green chillies, finely sliced

1 handful of fresh sugar snaps

400g squid, cut into rings

1 tbsp five spice powder

3 tbsp light soy sauce

1 handful of fresh coriander

250g medium egg noodles

1 lime, quartered

1. In a bowl add the five spice powder to the squid rings and put to one side.

2. Place the oil into a wok or shallow pan and add the onion, garlic, ginger. Cook on a medium heat for a couple of minutes before adding the red pepper, green chillies, sugar snaps. Cook for a further couple of minutes before adding the five spiced squid.

3. Move around the pan so that ingredients do not burn. Add the soy sauce and continue to cook for 3 more minutes.

4. Boil the egg noodles according to the packet and then drain and serve into bowls.

5. Just before serving add the fresh coriander to the squid.

6. Spoon the Asian squid onto the noodles, place the lime on top and serve immediately.


Mexican Tortilla Soup

It’s been half term this week so until now I ‘ve not had a second to sit down and actually write a blog post. I had wanted to put up one of my ‘en papillote’ recipes, but although I ended up eating three fish meals ‘en papillote’  this week each time it was in the evening and by the time the little parcels of deliciousness came out of the oven the lighting was frankly too dark to get a good shot. Lightening or rather natural lightening is key to good food photography and whilst I am still learning I feel it is important to heed this one basic rule. When I started food blogging two years ago, virtually to the day, my food photography was pretty appalling and whilst I have not got to where I want to be quite yet, it has at least improved. This shot was taken at night and I look back at it now and cringe – in fact I think I may even re blog the recipe – Chilli Crab Linguini – with more appealing photographs as the recipe is a keeper and perfect for a midweek supper.

Anyway I digress, the recipe for today’s blog is straightforward and perfect for a light lunch. It uses a spoonful of the chipotle sauce that I blogged about a couple of months ago – hands up whose attempted to make it? I made another batch of 7 pots the other day as all the others had finished. By all means buy a ready made chipotle sauce but if you have a little bit of time (it really does not take long) I really urge you to try making your own chipotle sauce – recipe here.  The chipotle gives the soup an earthy, delicately spiced flavour – for those who have not tried chipotle chillies before they are NOT ‘blow your mind’ type of chillies but more of a smokey, gently spiced chilli that keeps you coming back for more. My seven year old loves the soup and does not find it too spicy for her palate.

Mexican Tortilla Soup

Serves 6

4 tbsp olive oil

2 onions, sliced

3 garlic cloves, chopped

1 corn tortilla, broken up

1 tbsp of chipotle sauce

2 (400g) tins of tomatoes

1 tbsp brown sugar

1 tsp fresh oregano (or dried)

1.5 litres chicken/vegetable stock

salt and pepper to taste

Garnish

2 corn tortillas, chopped into 1 inch strips

vegetable oil, for frying

4 pasilla dried chillies, deseeded and stems removed (or you could use ancho)

100g feta cheese, crumbled

handful of fresh coriander, chopped

half a lime per serving

(You can also add avocado and sour cream although I omitted them for this shoot)

1. In a large pan – I find my large casserole Le Creuset pot is perfect for this – add the olive oil and when it is hot add the onion and gently cook for around 10 minutes before adding the garlic and the broken up corn tortilla. Leave these three ingredients to cook for another five minutes.

2. Now add the chipotle sauce, brown sugar, tinned tomatoes, oregano and a sprinkling of salt and pepper. Leave to cook for another 10 minutes before adding the stock and simmering for a further 10 minutes.

 3. Using a hand blender, blend the soup until smooth and then let to simmer gently for a few more minutes.

4. While the soup is simmering, place the pasilla chilles in a bowl of warm water for 10 minutes and then remove the stems and deseed. Pat dry with kitchen paper.

5. Heat up some vegetable oil in a small pan. You want to make sure that there is enough vegetable oil so that the tortilla will float on the top. I find that 200ml is more than enough – (you can reuse this oil fyi!). When it is hot and small bubbles are rising to the surface, gently add the strips of corn tortilla. They will sizzle immediately and begin to bronze quickly so move them around the pan for a few seconds so that they are bronzed all over. Remove with a slotted spoon and place on kitchen paper before transferring to a bowl.

6. Delicately place the chillies in the remaining oil. If they are still wet at all they will spit so be vigilant when placing them in the oil. Move them around in the oil for a few seconds then also place on kitchen paper. Chop up into bite sized portions and place into a bowl.

7. Crumble the feta, roughly chop the coriander and half the limes. (if you are using avocado – chop this is up into small cubes). Place in bowls on the table so that the hungry masses can add whichever garnish they wish to their Mexican tortilla soup.

Also if you are using sour cream, place in a bowl so those who wish can an add a dollop to their soup. I had this all ready and then forgot to photograph the sour cream on the soup as well. A case of being hungry so quickly wanting to photograph the soup and then eat with the rest of the family!


Rezala – Lamb Rib Chop Curry with Rose Water and Saffron

Tomorrow I am heading off to Asia once again, returning to Hong Kong, but also managing to squeeze in a long overdue visit to Vietnam. I’m looking forward to visiting my favourite eating haunts that I discovered on my last visit to Hong Kong in December/January, as well as scoping out new restaurants that I never had time to visit. As for Vietnam, well I cannot wait to see what it has to offer on the food front. I am definitely going to be seeking out the ubiquitous Pho – the legendary Vietnamese soup and Banh Mi, which I fell in love with after eating my first here in London, it’s basically a Vietnamese version of a sandwich but is off-the-charts incredibly tasty. I am also looking forward to sampling a variety of Vietnamese spring rolls and hoping I can remember how to make them when I come back home so that I can share the recipes with you. Whilst I am not a coffee drinker I hear the coffee in Vietnam is out of this world and may even win over a non-coffee drinker….so let’s see.

In the meantime the dish I wanted to leave you with today, and one that I hope that you will try, is a Bengali dish known as ‘Rezala’, whose roots lie with the Muslim rulers of the Mogul era. It is both fragrant and sweet and yet there are some sharp notes from the lime that compliment the overall taste of the dish. Other flavours resonate from the dish as well including: cloves, cardamom, saffron, ginger, garlic, cumin and chilli powder. It is a dish that heightens the senses and beckons you to eat more….so you’ve been warned!

Rezala – Lamb Chop Curry with Rose Water and Saffron

Adapted from Mridula Baljekar’s recipe in ‘Curry Lovers Cookbook’

Serves 6-8 (or 4 with leftovers for another day!)

3 medium sized onions, chopped

splash of water

3 garlic cloves, crushed/chopped

3 tsp grated fresh ginger

6 cloves

18 peppercorns

8 green cardamom pods

4 small pieces of cinnamon bark

14 lamb rib chops

2 medium sized onions, very finely sliced

200ml natural plain yoghurt

75g butter

vegetable oil

1 tsp salt

1 tsp ground cumin

1 tsp chilli powder

1 tsp sugar

juice of half a lime

pinch of saffron – place into a small bowl with 1 tbsp of hot water for 10 minutes

1 tbsp rose water

1. Place the three chopped onions into a blender with a splash of cold water and blend until you have a smooth puree.

2. Place the puree into a large bowl along with the grated ginger, garlic, cloves, cardamom pods, peppercorns and cinnamon bark and stir together before adding the lamb rib chops. Use your hands to  coat the lamb fully. Cover with cling film and place in the fridge for a few hours – or overnight if you can. Remember you need to bring the meat back up to room temperature before cooking it!

3. Heat some oil in a large pan and gently fry the remaining 2 onions, which need to be finely sliced. Gently fry until the onions have browned, which will take around 6 minutes. Remove the onion from the oil and place on some kitchen paper so as to soak up the oil.

4. Using the same pan, fry the marinated lamb chops for 5 minutes before reducing the heat and simmering on a low heat covered for another 5-7 minutes.

5. In a separate pan mix the butter and yoghurt together, stirring constantly for around 5 minutes before stirring into the lamb chops, along with the salt, cumin and chilli powder. Cover and gently cook for 50 minutes.

6. Finally add the sugar and stir into the curry before adding the lime juice, saffron and rose water. Mix well and simmer for a few minutes.

Serve with the fried onions and a scattering of rose petals. The sweet smells coming from this dish are sublime. Eaten with rice or naan, this dish is very memorable. I hope you agree.

Cold Rice Noodles with Peanut-Lime Chicken

The past week or so has been very memorable here in the UK. The Olympics kicked off to an outstanding opening ceremony last friday, which made me laugh and marvel in equal measure. Ok, I’m biased, but I thought that it’s quirky, eccentric nature pretty much summed up us Brits. No amount of money spent on an opening ceremony, past or future, can trump the fact that Her Majesty gamely played herself with Mr Bond as part of the ceremony itself. How cool and even the non royalists out there must have had a sneeky smile on their faces. As for Mr Bean – what a great touch to include him as part of the ceremony; he was definitely one of the highlights.  It was fun, original and gamely humorous and had all of us glued to the TV screen for over three hours, wondering what Danny Boyle was going to bring out of the hat next. I think it is safe to say he is a ‘slam dunk’ for a knighthood in the coming months.

Since the Games begun I have been glued to the TV watching the swimming in particular. Mike Phelps gaining his 19th Olympic medal making him the greatest winner the Olympics has ever seen -truly remarkable. Also the spectacular performance of China’s Ye Shiwen, who, at 16 years of age, wins gold in the women’s individual medley.  It’s addictive viewing watching the world’s best athletes compete in such a wide variety of sports.  I’m going to see the men’s beach volleyball soon, which should be fun and a little surreal to watch in central London.

We’ve had some good sunny days recently, which always inspire me to cook fragrant Asian dishes that are not too heavy. This recipe I stumbled across really recently and it caught my attention as it was served cold and could almost be classed as an Asian noodle salad, of sorts. I’ve cooked it a few times already and I have to admit it’s really good. My number one fan (Big A – who is 6) gave it a definite 10/10.  It was originally posted in the New York Times, however, I found it on the hugely popular food bloggers site ‘Smitten Kitchen‘. As with all great recipes, Deb Perelman – from Smitten Kitchen, adapted hers from the original and I changed hers a little bit further. For example,  I omitted chilli, as I was feeding it to Big A, Little Z and my father who all don’t eat chilli. That said if I were feeding it to just adults (or chilli loving adults) I would definitely add the chilli (hence it has remained on the list of ingredients), I added only one large cucumber, added baby sweetcorn, slightly more rice noodles.

For the really observant amongst you, you will have noticed that I completely forgot to scatter the crushed roasted peanuts over the dish for all the photos. When I sat down and started eating the meal I remembered but clearly too late for the shots for this blog post !

Cold Rice Noodles with Peanut-Lime Chicken

Sourced from Smitten Kitchen, original recipe from David Tanis whose recipe appeared in The New York Times

Serves 6

Dipping Sauce

6 tbsp Asian fish sauce

6 tbsp brown sugar

12 tbsp lime juice

2 garlic cloves, crushed

small thai red or green chilli,  to taste but optional

Peanut Dressing

3 tbsp Asian fish sauce

3 tbsp rice vinegar

9 tbsp lime juice

3 tbsp of light soy sauce

1 1/2 (one and a half) inch piece of ginger, peeled and sliced

6 tbsp natual unsalted peanut butter (if you can’t find this just use regular)

1 tbsp toasted sesame oil

pinch of cayenne

Chicken and Noodle Salad

3 tbsp toasted sesame oil

500g boneless skinless chicken thighs

250g dried rice noodles

1 large cucmber, cut in 1/4 inch half moons

2 carrots, cut in thin julienne

handful of baby sweetcorn, halved

handful of fresh mint and coriander (you could also add Thai basil)

4 spring onions, thinly sliced

handful of roasted peanuts, crushed

lime wedges to serve

1. Begin by making the ‘dipping sauce’. On a low heat, place all the ingredients into a pan and gently stir until the sugar has been properly dissolved – this will only take a few minutes. Place in a small serving bowl and allow to cool.

2. Next you need to make the ‘peanut dressing’. Place all the ingredients into a small food processor and puree all the ingredients so that you are left with a thick creamy sauce. Pour into a serving bowl.

3. In separate large bowl pour approximately half of the dipping sauce and a third of the peanut dressing and stir together. Add the chicken to the mixture and coat thoroughly using your hands. Leave to marinate for at least 15 minutes.

4. Once the chicken is marinated gently heat up a griddle pan and add a little toasted sesame oil and brown the chicken thoroughly on both sides, which will take a few minutes per side. I cook my in batches so that I can be sure that the chicken in properly cooked through. As an alternative you could grill the chicken for 20-25 minutes.

5. When the chicken is cooked, chop into bite sized pieces.

6. To serve there are a few alternatives that you can do –

option 1: Place everything on a large serving platter with the noodles, chicken, vegetables, dressing and marianade all separated out and then your guests/family can help themselves.

or

option 2: Divide the cooked noodles into individual bowls or plates. In a small bowl toss the vegetables with 1 tablespoon of dipping sauce. Place the vegetables and chicken onto each bowl/plate. Place a further 2 teaspoons of dipping sauce and dressing to each helping. Add the herbs, peanuts and spring onions to each bowl and serve.

Note: As an alternative to baby sweetcorn you could add fresh peppers which work equally well. 


Soba Noodles with Tofu, Aubergine and Mango – it’s totally addictive BEWARE!

It’s always a joy cooking for a foodie friend who eats everything and shares a similar enthusiasm for exciting flavours, textures and foods. Said friend is off to pastures new in California so I wanted to prepare a simple and yet interesting lunch that he may not have tried before, but that he was hopefully going to remember fondly.

In the last couple of years my love for tofu has grown exponentially, on average I would say I eat it once a week as a main meal. One of my all time favourite recipes – Ma Po Tofu – I  sometimes cook without the pork mince and add loads of spinach to compliment the tofu instead. I would really recommend you give this dish a go if you haven’t already, it’s absolutely superb.

Another dish using tofu, which I discovered more recently, is the one that I want to share with you today. It’s a perfect spring/summer dish bursting with colour and if the truth be told, totally addictive. Between the two of us we almost saw off a portion which Yotam Ottolenghi says ‘serves 6’. I know, I know, it  makes us sound rather piggy. Look we were hungry and it is so delicious I bet you too would have seconds or maybe thirds ;o). I think that as a main dish it’s serving is better suited to 4 than 6, unless your guests have sparrow appetites that is!

Soba Noodles with Tofu, Aubergine and Mango

Adapted  from Plenty by Yotam Ottolenghi

Serves 4-6

120 ml rice vinegar

40g caster sugar

1/2 tsp salt

2 garlic cloves, finely chopped

1/2 red chilli, finely chopped

1 tsp toasted sesame oil

1 lime, zest and juice

300ml sunflower oil

2 aubergines, cut into 1cm dice

396g firm tofu, cut into small cubes (a little more or less is fine so don’t worry about getting exact amount)

250g soba noodles

2 ripe mangoes, cut into strips or dice

small handful of Thai sweet basil, chopped

handful of fresh coriander, chopped

1 small red onion, finely sliced

1. To prepare the dressing warm the vinegar, sugar and salt in a pan for a minute so that the sugar dissolves. Remove from the heat and add the chilli, garlic and sesame oil and leave to cool. Once it is cool add the lime juice and zest.

2. In a frying pan heat up  half the sunflower oil and gently fry the aubergine in batches. To save time I cooked the aubergine in two frying pans cooking simultaneously. When they have bronzed place on kitchen paper to cool.

3. Using the remaining sunflower oil (if necessary – you may have enough left from cooking the aubergine!) gently heat up the tofu and cook until it has a crispy light brown appearance. This should take 6-8 minutes. Similar to the aubergine place on some kitchen paper to soak up some of the oil.

4. Heat a pan of boiling salted water and cook the soba noodles for around 5-8 minutes, stirring occasionally. Drain and rinse under cold water, shaking off as much excess water as possible. Place on a tea towel to dry.

5. In a mixing bowl toss the noodles with the dressing, mango, aubergine, herbs (save a few to scatter on top when serving),  red onion and tofu. Transfer to another serving plate/dish. You can eat immediately or set aside for a couple of hours.

Florentine Lemongrass soup

Spinach is one of those super foods that you can literally feel the goodness seeping into your body with every mouthful. When Catherine de Medici became Queen of France in 1533, she was so taken by spinach that she insisted it be served at every meal. Dishes that are cooked with spinach are known as ‘Florentine’, after Catherine’s place of birth – Florence. Hence the name I have given this delicious soup.

I know I tend to say this a lot in my blogs, but this really is super easy and takes no time at all – so perfect for a light lunch or for a starter when guests are coming over. You can prepare it in advance, freeing you up to have proper conversation without the worry of having to prepare the starter. Have you ever tried making souffles for a starter? Well believe me, the results are delicious, but it does involve a lot of care and attention and time away from your guests to get it right.

You can absolutely use fresh spinach here, but I often tend to use frozen as I always have bags of it in the freezer. This soup is versatile in that it tastes equally good in the summer or winter.

Florentine Lemongrass Soup

Serves 4-6

3 garlic cloves, chopped

1 onion, chopped

2 tbsp of olive oil

2 green chillies, deseeded and chopped

2 tsp of lemongrass paste (I use Barts)

1kg of spinach, frozen or fresh

2 pints/40 fl oz vegetable stock

400ml tin of coconut milk

juice of 2 limes

single cream to garnish, if desired

salt and pepper

1. In a large saucepan heat the olive oil and then fry the onions gently until they begin to become transparent – this should not take more than six minutes. Then add the garlic and chillies continuing to stir for a few minutes.

2. Add the vegetable stock and lemongrass paste and gently simmer for five minutes. Then add the frozen or fresh spinach and cover until they have completely wilted/defrosted. Once this has happened use a hand blender to blend the soup thoroughly.

3. Add the coconut milk and lime juice and blend once again. Season to taste and garnish with single cream if desired.

Asian Vinaigrette

Summer is the season for salads and even a plain green salad can taste crisp and cleansing with a delicious vinaigrette or salad dressing to accompany it. My default dressing is always the typical french vinaigrette of olive oil, lemon, white wine vinegar, whole grain mustard, a little garlic and a sprinkling of salt and pepper. I fancied a change so came up with this  fresh, zingy, Asian influenced dressing, which gives a pretty standard green salad some edge – and all salads deserve to have a little ‘edge’ now again.

Its super easy and quick to prepare. If you have an old jam jar I suggest putting all the ingredients into that and then, with the lid on, giving the ingredients a good shake about to give them a thorough mix together.

Here’s how to make it.

Asian Vinaigrette 

Serves 4-6

1 old jam jar

3 limes, squeezed

1 tsp of sesame oil

1 tsp of light soy sauce

1 tsp of nam pla fish sauce

1 to 2 tsp of white sugar

half a tsp of chilli flakes

In an old, clean jam jar squeeze three limes and then add all the ingredients. You may find that you need a little more sugar or another lime juice so be prepared perhaps to add a little more of one or two of the ingredients. I find that it does not need any salt as this is provided by the soy sauce. Shake the contents of the jar thoroughly and taste to see if the vinaigrette is to your liking.


King Prawn Noodle Broth – effortless joy in a bowl

Do you ever feel too exhausted to cook in the evenings but want a fresh, healthy, comforting dish that you can prepare in lightening speed with very little effort? I think all of us do from time to time, I certainly did this evening. So I put together this wonderfully flavoursome broth in less than 10 minutes. I feel it cleanses the body and heightens ones senses. It’s definitely my kind of dish.

King Prawn Noodle Broth – Serves 2

190g  Jumbo king prawns (or any prawns will do)

1 bag/ 200g of udon noodles (double the amount if you are feeling hungry)

1 tamarind broth cube (Knorr make them)

1 garlic clove, finely sliced

6 thin slices of fresh ginger

half a red chilli, finely sliced

1 lime

1 spring onion, finely sliced

1/2 tsp of lemongrass paste

2 tsp of light soy sauce

1 tbsp sesame oil

1 tbsp of coriander, chopped

1. Thinly slice the garlic, ginger, red chilli and spring onion. Heat the sesame oil in a pan, and when it is hot, add the chopped ingredients and the lemongrass paste, and cook gently for a couple of minutes.

2. Meanwhile put 600ml of boiling water in a pan on a low heat and break up the tamarind broth cube into the water. Then add the prawns and watch them reduce in size slightly – this will only take a couple of minutes – be careful not to over cook them!

3. Place the contents of the pan with the garlic, ginger, chilli, lemongrass and spring onion into the broth along with the udon noodles. Whilst I use udon noodles any type of noodles will work equally well. Experiment and see which you prefer. Cook the noodles for 3 minutes and during this time add the soy sauce and the juice from half a lime.

4. Serve piping hot with chopped coriander on the top with a lime quarter on the side.

If you are feeling under the weather or want a general ‘pick me up’ this warming broth is sure to reinvigorate you. Instead of prawns you could use chicken or for a vegetarian option: broccoli, sugar snap peas, mange tout or pak choi.


Watermelon, Feta, Black Olive, Mint and Lime Salad – a knockout combination

OK, I take it all back. The weather gods have clearly been reading my blog so much so they have decided to let it shine big time. Ever since I wrote my blog about ‘Raoul’s Eggs Rock‘ and that it is incessantly raining, the sun has come out to the extent that it’s been a scorcher ever since. A few days ago London was hotter than the Caribbean, which is wonderful really wonderful, aside from the fact that England is not really set up for extreme conditions – hot or cold. Its been so humid I keep having to go down to our cellar to get some cool air. Even the paddling pool water has heated up to bath water temperature. I don’t know about you but when it is really hot and humid I really like eating mountains of fresh fruit. A huge bowl of sweet melon, mango, strawberries, raspberries and fresh mint always goes down a treat.

This inspired me to share one of my absolute favourite salads with you. I have been cooking it for years and then discovered that the ubiquitous kitchen goddess – Nigella – has a similar recipe. It combines fresh, cleansing watermelon with the salty robust feta cheese. The flavours combined are perfectly balanced, although I know its hard to believe. Then with lime juice, black olives, fresh mint and a splash of olive oil you have a heavenly dish.

Its simple to create, truly delicious and very memorable. Perfect for a light lunch or for an evening dinner served alongside some grilled chicken. Give it a try and let me know what you think.

Watermelon, Feta, Black Olive, Mint and Lime Salad

Serves 4

 1 mini watermelon (circa 2kg in weight), cubed

200g/8oz feta cheese, cubed

100/4oz black pitted olives

2 limes, squeezed

2 tbsp of olive oil

1 handful of fresh mint, torn into small pieces

1. Cut the watermelon into bite sized cubes and place in a bowl. Try not to handle it too much as it will begin to break and become more juice than melon.

2. Similarly cut the feta cheese into slightly smaller cubes than the watermelon. Place into the same bowl as the watermelon along with the black olives.

3. Squeeze the juice of two limes over the ingredients as well as 2 tbsp of olive oil. Using your hands mix into the ingredients gently.
